Supreme Pizza Pasta Bake

Supreme Pizza Pasta Bake | Aunt Bee's Recipes

       It's PIZZA!  It's PASTA!  This recipe turned out SO amazingly wonderful!  But how could it not?  Combining pizza and pasta could never be a bad thing!!!!  This recipe is easily customized depending on what your family's favorite pizza toppings are.  

Supreme Pizza Pasta Bake
Ingredients
2 Tbsp bacon grease or oil
1 lb Italian Sausage, casings removed and crumbled
1 onion, diced (reserve a few for the topping)
1 bell pepper, diced (reserve a few for the topping)
8 oz mushrooms, sliced
3 cloves garlic, minced
28 oz pizza sauce
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp italian seasoning
1/2 cup bacon, cooked and crumbled
3.25 oz pepperoni's, (reserve a few for the topping)
2.25 oz can of black olives (reserve some for topping)
1 egg
1 cup whole milk
1/2 cup parmesan cheese, grated
8 oz rotini noodles, cooked 1 minute less than al dente
3 cups shredded Mozzarella Cheese
Directions
       Add 2 Tbsp bacon drippings to a large skillet.   Add crumbled Italian sausage, onions, bell peppers and mushrooms.  (Be sure to save a few onions and bell peppers out for the topping)  Cook until sausage is cooked through.  Drain.  Add meat mixture back to pot over low heat and add the minced garlic.  Stir constantly for 1 minute then add the pizza sauce, salt, black pepper, Italian seasoning, cooked bacon, pepperoni and black olives.  (reserve a few black olives and pepperoni for the topping).  Keep over low heat, stirring occasionally until warmed through.  
       Prepare noodles buy cooking them 1 minute less than the al dente instructions.  While noodles are boiling, combine the egg, milk and parmesan cheese.  Drain noodles and toss with egg mixture.
       Spray a 13x9 pan with cooking spray.  Place noodles in the bottom of the pan.  Next, layer meat sauce over the top.  Top this with mozzarella cheese.  Lastly, place any reserved pizza toppings on top to give it a pizza look.  Bake at 350 degrees for 20 minutes or until warmed through and cheese is melted.

Cheesy BBQ Rice Medley

Cheesy BBQ Rice Medley | Aunt Bee's Recipes

This was the yummy side dish we served with our Skillet BBQ Pork Chops for Memorial Day!  It was so delicious!  Full of beans, corn, veggies and cheese, this rice could be a meal on its own!  

Cheesy BBQ Rice Medley
Ingredients
2 Tbsp bacon drippings or butter
1 bell Pepper, diced
1 onion, diced 
3 cloves garlic, minced
1 and 1/4 cup water
1 cup minute rice
1 chicken bouillon cube 
15 oz can of corn, drained
15 oz can of black beans, drained 
1/2 cup of your favorite barbecue sauce
1 Tbsp liquid smoke
shredded cheese
green onions
OPTIONAL: a few finely minced jalapenos would be SO good in this!
Directions
In a large oven proof skillet with a lid, Saute the onions and bell pepper in the bacon grease until tender. Add the garlic and stir constantly for 1 minute.  Add the water chicken bouillon cube and bring to a boil.  Stir in rice and cover and remove from heat.  Let stand 5 minutes.  Put back over low heat and stir in corn, black beans, barbecue sauce and liquid smoke until heated through.  Top with cheese and green onions and place under broiler until cheese is melted.

Southwest Chicken Lasagna


      This Southwest Chicken Lasagna we had tonight is a winner!  I love when recipes turn out exactly like they did in my head!  This may have even turned out better!  It was a great way to use up leftover grilled chicken. We will DEFINITELY be making this one again!

Southwest Chicken Lasagna
Ingredients
3 cups cooked chicken, shredded or chopped
15 oz can kidney beans, drained
15 oz can corn, drained
16 oz jar of salsa (We used mild, but you could use whichever kind you prefer)
15 oz can tomato sauce
3.8 oz can sliced black olives, drained (reserve a few for the top)
1 cup sour cream
1 cup cottage cheese
2 cups sharp cheddar, shredded
2 cups monterey jack cheese, shredded
6 Lasagna noodles
Green onions for garnish
Directions
In a large sauce pan, combine cooked chicken, kidney beans, corn, salsa, tomato sauce, and black olives (reserve some black olives for the top).  Simmer over low heat, uncovered for 20 minutes.  In one bowl, combine sour cream and cottage cheese.  In a separate bowl combine the cheddar and monterey jack cheese.  Boil lasagna noodles.  
To layer lasagna:
Place 1/3 of chicken mixture in bottom of 13x9 pan.  Place 3 noodles then 1/2 of the sour cream mixture.  Top with 1/3 of the cheese.  Place the next 1/3 of sauce, the last 3 noodles, the rest of the sour cream mixture, then the next 1/3 of cheese.  Pour on the rest of the sauce, then the rest of the cheese, then top with the reserved black olives.  Bake at 350 degrees for 20 minutes.  Allow to rest for 15 minutes before serving.  Garnish with green onions.  

Skillet Barbecue Pork Loin Chops

30 Minute Skillet BBQ Pork Loin Chops | Aunt Bee's Recipes

       We didn't grill for Memorial Day, but we did have some fun barbecue recipes!  The first one I am sharing is our Skillet BBQ Pork Loin Chops.  This is a super easy 30 minute meal and oh so delicious!  These would be GREAT with Cowboy Mashed Potatoes or something else to soak up all the extra bbq sauce!!!  

Skillet BBQ Pork Loin Chops
Ingredients
(4) 1/2 in thick boneless pork loin chops
1 tsp Lawrys seasoning salt
2 Tbsp butter
1 onion, diced
3 cloves garlic, minced
1/4 cup apple cider vinegar 
1/4 cup chicken broth
1 cup of your favorite bbq sauce
1 TBSP worcestershire
1/2 cup brown sugar
Directions
Season both sides of chops with seasoning salt.  Melt butter in large skillet and brown both sides of chops over medium high heat.  Remove chops and saute onion in the pan drippings until brown.  Add in the minced garlic and stir constantly for 1 minute.  Deglaze the pan with the apple cider vinegar.  Add in the chicken broth, bbq sauce, worcestershire and brown sugar.  Return the chops to the skillet and bring to a boil.  Cover and simmer for 20 minutes or until cooked through.  Serve sauce over pork chops.

Beef 'n Cheddar Salad with Creamy Roasted Garlic & Lemon Dressing


    I am all the time sharing our dinner recipes so today I thought I would share one of my favorite lunches!  My lunches tend to be on the lighter side because, well, Uncle Bee likes to eat a heavier dinner and I have to save room :-)   For my 'Beef n Cheddar' salad, I use romaine lettuce, GOOD deli roast beef, sharp cheddar cheese, tomatoes, carrots, cucumbers, bell peppers, purple onion and creamy roasted garlic dressing.  Oh man, this dressing(!)

This is my absolute favorite Creamy style dressing.  It tastes somewhere between ranch and Caesar with some roasted garlic and lemon thrown in there.  WARNING*** This dressing is not for the occasional garlic user.  It is STOUT.   Like I like it.  <SideNote> This salad and dressing are also low carb!  BONUS for those of us (not me) watching our carbs!  


In fact, this dressing is SO good that having it on hand in the fridge is really all the motivation I need to snack on more veggies!  

Creamy Roasted Garlic and Lemon Dressing

1/4 cup Roasted Garlic, mashed into a paste (I roast it using this method.  It takes me about 2 whole bulbs to get 1/4 cup)
1/2 cup Mayonnaise
3 TBSP grated Parmesan Cheese
1 Lemon, the zest and the juice
1/4 cup Heavy Cream
1/4 cup Whole Milk
1 tsp Salt
1 tsp Black Pepper
Combine all ingredients and blend until smooth. You can use more or less milk or cream depending on how thick you like your dressing.  Store, covered in the fridge.  I hope my fellow garlic lovers try it and let me know what y'all think!

Slow Cooker Beer Sausage Dawgs | Aunt Bee's Recipes

       Good morning!!!!  Boy, oh boy, am I glad summer is here!!!  Yesterday, we cut into our first watermelon of the season, had our first ant infestation from my son leaving half an Oreo in his play room, and  the pool is open so my kiddos slept like ROCKS last night!! AHHHH!  We tend to use the slow cooker a LOT this time of year, because my kids get SO hungry swimming.   Like, the kind of hungry that doesn't have time to wait for mama to throw together even the yummiest 30 minute meal :-)  
       This slow cooker recipe is not going to win any health awards, but by golly it will do the trick after a long day of swimming!!!  

Slow Cooker Beer Sausage Dawgs
Ingredients for slow cooker
2 lbs Smoked Sausage
2 14 oz cans Sour Kraut, drained
1 cup Brown Sugar 
12 oz of your favorite beer
For the topping and serving
2 TBSP oil, butter or bacon grease (or a combination of these)
1 Bell Pepper, sliced
1 Large Onion, sliced
1/2 cup of your favorite barbecue sauce
1/2 cup of juices from the crock pot after cooking
Hot Dog Buns
Directions
Slice your smoked sausage into bun length pieces.  Place in bottom of the crock pot.  Top with drained sour kraut.  Combine brown sugar and beer in a bowl and pour over sausage and kraut.  Turn crock pot to low and cook for 8 hours.
At some point during the 8 hours, saute your bell pepper and onions.  After your sausages are done cooking, ladle 1/2 cup of the juice from the crock pot and mix it with 1/2 cup of your favorite barbecue sauce.  This will make a FANTASTIC topping for your sausage dawgs!  To serve, place sausage dawgs and kraut on buns, top with bell peppers and onions, if desired, and pour some sauce over the top!  Eat quickly, cuz it's gonna be messy!!!!  Enjoy!

5 Ingredient Arby's Sauce COPYCAT


Y'all know we don't do a lot of eating out, ESPECIALLY not at fast food restaurants... but I am a SAUCY GIRL and every once in a while I get a craving for some kind of sauce!  Some of my favorites are Taco Bell's Baja Sauce, McDonald's Big Mac Sauce and Arby's Barbecue Sauce!  I played around with a few recipes until I got the Arby's sauce dang near perfect for our liking! The best thing about this sauce (other than the taste), is it's only 5 ingredients and you don't even have to warm it up!  I made us beef and cheddar's with tons of this sauce the other day with leftovers from my Easy Slow Cooker French Dips!  I am so excited to share it with y'all!  Please let me know if you try it!  <3

5 Ingredient Arby's Sauce Copycat
Ingredients
1 cup Ketchup
1/2 cup Apple Cider Vinegar
1/4 cup Brown Sugar
1 Tbsp Worcestershire
1/2 tsp Garlic Salt
Directions:
Combine ingredients and top your favorite roast beef sandwiches or anything else you like Arby's Sauce on!!!
