Beer Cheese Loaded Mashed Potatoes


        We love mashed potatoes.  My hubby could eat mashed potatoes for every meal.  We have a few standard mashed potato recipes that we rotate through.  I had an epiphany last week and decided to try my hand at beer cheese mashed potatoes.  I have no clue where I got this idea from.  Wild recipe ideas pop into my head when I get too hungry.  Sometimes they turn out terribly and then others, like this one, are some of my greatest kitchen successes! I can't wait for you to try these!!!!

Beer Cheese Loaded Mashed Potatoes
Ingredients
2 lbs potatoes, peeled and cut into fourths
4 cloves garlic peeled and left whole
4 TBSP butter
1 cup sharp cheddar cheese
1/2 cup beer
1/2 cup heavy cream
1 tsp salt
1 /2 tsp black pepper
6 slices bacon, cooked and crumbled
Green Onions, sliced
Directions
Place potatoes and garlic cloves in a large pot of water and heat to boiling.  Boil for 20 minutes or until potatoes are ready to mash.  Drain potatoes and garlic well and add them back to the pot over low heat to continue to dry.  Mash potatoes and garlic until no lumps remain.  Add butter, cheese, beer, cream, salt and pepper.  Stir to combine.  You can use a hand mixer if desired, but I didn't have to.  Add in the green onions and bacon and serve!

  3. Absolutely fantastic! We eat loads of mashed potatoes too! My man is Irish so of course we do! :) I will be using this recipe in the very near future. Looks wonderful, what a great idea!
