The Ultimate Grilled Cheese
When I shared that amazing Creamy Tomato Soup on facebook yesterday, I promised several of you guys an Ultimate Grilled Cheese worthy of dipping in that soup. Well here it is y’all. I could eat this grilled cheese with that creamy tomato soup every day! It is THAT good. The second time I made the cheese mixture for these sandwiches, I doubled it to store in the fridge to go with leftover soup. Y’all are going to love this!
- 3/4 cup mayonnaise
- 1/4 cup plus 2 Tbsp cream cheese, softened
- 1 cup shredded Cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 10 slices sourdough bread
- 4 tablespoons butter, softened
In a medium bowl with an electric mixer, beat mayonnaise and cream cheese until light and fluffy. Stir in Cheddar cheese, mozzarella, garlic powder.
Spread each of 5 slices evenly with cheese mixture. Top with remaining bread slices. Spread butter on both sides of the sandwiches.
In a skillet over medium heat, cook in batches until golden on both sides and the cheese is melted.
